You can charge up your passes and shots by pressing A/Cross (X) or Right Trigger, depending on your settings. If you're a PC player, simply hold down the right mouse button. However, if you direct your charged-up shot at a player who is suddenly taken down by a Bludger or flies away, you'll want to cancel that command.
To do so, use the Evade skill. This will roll you to the right or the left side, and it's done by using the Left Bumper or the B/Circle. That's the only way to cancel charged-up passes, so you can continue flying normally with the Quaffle as a Chaser.

Canceling shots and passes can be an intended tactic, and it doesn't have to be a last-resort action. If Chasers are one-on-one with the Keeper, they can charge their shots and roll away to a different goal hoop at the last second. Moreover, if an opponent is chasing you, you can charge up a pass to an ally.
Although this will make you seem like an easy target for a second, cancel the pass by dodging away from the tackle quickly, and you'll successfully mislead the other team.
