Like everything else in Metaphor: ReFantazio, gardening takes time and effort. In this case, you'll need at least one day on the Gauntlet Runner. All you need to do to start the process is interact with the planter in the back of the room. This will allow you to choose the seeds you want to plant. However, it's worth mentioning that you won't be able to harvest them until the next day.
The good news is that this will not take a long time, and it can even be done when the Gauntlet Runner is not active. No matter what you have decided to plant, you'll end up getting two or three items at the end. Unfortunately, gardening doesn't work like cooking, and you won't be able to speed up the process in any way.
